First up was The Gingi Spritz.

1/2 oz Aperol, Meletti, or a light Amaro
2-3 oz of sparklingros

Directions:
Combine all ingredients over ice in a wine glass. Finish with a large orange twist and enjoy!

Next, we mixed up The Tuscan Sun.

Ingredients:
1/2 oz blanco Agricole Rum (preferably from Martinique; vodka would also suffice)
1 oz Italian or Spanish blanco vermouth (not dry vermouth!)
2 oz of chilled ros

Directions:
Combine ingredients in stirring vessel. Add ice, stir very briefly and strain into a chilled bistro glass. Finish with a garnish of small sprig Rosemary or lemon peel.

Last but not least, we whipped up a ros French 75.

Ingredients:
1 1/2 oz gin
1/2 oz simple syrup
1/2 oz fresh-squeezed lemon juice

Directions:
Combine ingredients in a cocktail shaker and shake vigorously. Top with sparkling ros and garnish with a gracious lemon twist.
