OK, I’m a sucker for Sriracha, aka rooster sauce. No — scratch that. I’m a FIEND for the spicy red sauce in the sticky squeeze bottle. And I’m certainly not alone.

But have you tried making Sriracha at home? I have. Sriracha recipes abound — I’ve found them everywhere from cookbooks to food blogs, and from Instructables to Reddit. But some versions take UP TO A WEEK to make, and others pale in flavor next to the real thing.

But then the clouds parted. I tried this recipe as soon as I saw it today, and it was done in the time it takes to watch an old episode of Saved by the Bell. The flavor? Insane. My hands? On fire.
